Brinjal Pickle



A young couple working from home.Highly tech lives.Everything is technology oriented.Including ordering groceries.Sometimes this may go awfully off track….and one lands up with more than a tad bit of what was required.The extras then find their way to our home.
So here I am - overwhelmed with a couple of kilos of baby brinjals…

Brinjal Achar

1.5 kg baby brinjals, washed,wiped dry and cut lengthwise.Discard stems
2 heaped tablespoons crushed garlic
2 heaped tablespoons grated ginger
1 table spoon coarsely pounded black mustard seeds
1/2 tablespoon dry roasted and ground fenugreek seeds
3 tablespoons Kashmiri red chilli powder
1 tablespoon red chilli powder
1 cup vinegar
3/4 cup sugar
3 tablespoons salt (please adjust) + a little extra
2 cups sesame oil



Sprinkle salt over the sliced brinjals.Place in a colander for the water to drain-about an hour.


Heat oil. Fry the sliced brinjal in batches in the hot oil.Drain and keep aside.

Add the ginger and garlic to the remaining oil. Saute over medium heat till very light golden brown.Add the chilli powders,mustard powder, fenugreek powder,salt.Mix well and add sugar and vinegar.Continue to cook till all ingredients are well mixed.

Add the brinjals.Cook for a further 15 minutes.

Mix well.Cool and bottle.
