Prawn Rice Mould
Rice-1 cup, washed, drained and boiled in salted water
Prawns-10, washed, deveined, chopped into small pieces
Chopped green beans, finely
diced carrots,sweet corn-1 cup
A few pieces fresh
pineapple , chopped fine
Green onions, 2 , chopped –use the greens too
Celery stalk and leaves-chopped 3 tablespoons
Grated cheese-1/2 cup
Garlic-4 cloves , crushed
Olive oil-1 table spoon +1/4 teaspoon
Black pepper corns-1
teaspoon-coarsely crushed
Salt
Heat oil in a wok or karahi.Add the garlic, sauté till light
brown.Add the chopped vegetables, cook on high heat till just done.(Add in
order in which they will cook)Put in the prawns,pineapple and green
onions.Saute till prawns cook.
Stir in the prawns.Cook for 2 minutes or till prawns are
done.Add celery,pineapple,green onions.Season with the salt and pepper.Turn off
heat.
Add in the cooked,cooled rice.Mix well.
Lightly grease a metal mould with ¼ teaspoon oil.
Fill in half the mould with the half the rice which had now been mixed with prawns and
veggies.Layer with grated cheese.Cover with remaining rice.Press into place.
Place the plate on which you are going to serve the rice on
the mould.Invert mould.
