Fish in a Mustard Sauce (Sarson Maach)

 (500 gms fish on the bone, washed well and marinated with ½ teaspoon turmeric and salt for ½ an hour

   Make a fine paste with 4 tablespoons yellow mustard seeds soaked in water for an hour, 4-5      green chillies and 3 cloves of garlic.    .
   1 tomato diced
2 teaspoons ginger paste
1 teaspoon turmeric powder
1 teaspoon panchporan
1 teaspoon red chilli powder
Salt
Sugar
3 tbsp mustard oil

Heat the mustard oil in a pan till it reaches smoking point.
Fry fish in hot mustard oil till slightly golden brown.Remove and drain excess oil by placing on absorbent paper.
In the same oil, add the ginger paste and sauté for few seconds.
    Add the mustard paste, lower the heat, sauté and mix in the diced tomatoes. Cook for a few       minutes.Season with salt ,sugar and red chilli powder.
Add the fish and let it simmer for few more minutes.

Garnish with chopped cilantro.
Serve hot with rice...

Hi. Great website & recipes. Wondering if Sarson Maach is a variation of the Bengali version. Bongs normally don't use ginger or tomatoes in this recipe.
