The Flavors of Home

The skies are clear azure blue. Northern California's beautiful landscape of trees, green landscape and crisp, clean air.It’s summer time here-but for me-it’s the feel of the hill stations back home. Bright sunshine and that nip in the air. It’s a full house and one enjoys the busyness in the kitchen and the cacophony of children’s voices. It’s a time for family bonding-the sharing of the joys and more. A perfect quintessential vacation. Midway through her busy workday, daughter calls and asks what’s for dinner-and when I ask what she wants me to cook…."anything easy" she says.Oh, she adds," but it should be full of the flavors of home!"

Prawn Curry

15-20 prawns, washed, shelled, cleaned and deveined
1 onion sliced
1 tomato diced
1 “piece ginger, grated
4 cloves garlic
Green chilli, chopped (use according to heat you like)
½ can coconut milk
1 teaspoon saunf
½ cup chopped coriander leaves and stalks included
½ teaspoon red chilli powder
¼ teaspoon turmeric powder
Salt
Water
4 table spoons oil

Heat oil-add the saunf and when it sputters, add the onion and sauté till slightly caramelized. Put in  the ginger and garlic-stir, and combine the tomatoes, green chillies,coriander leaves, turmeric and chilli powder. Season with salt. Cook 5-6 minutes. Take off the heat-allow to cool.
Blend in a mixer using coconut milk. Return to pan, add prawns, cook till just done. Add water to adjust consistency.
Goes well with rice!
