Mirchi Ka Saalan
15-20 long green chillies,washed, dried,slit and seeded
½ teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon fenugreek seeds
1/4 teaspoon nigella seeds
1/4 teaspoon turmeric powder
2 teaspoon coriander powder
2 tsp chilli powder (optional)
6 tablespoons tamarind water
2 tablespoons oil+1 for sautéing the green chillies
Salt
Grind to a fine paste:
6 cloves garlic,1/2” piece of ginger,3 tablespoons grated coconut
Grind together:
2 tablespoons roasted peanut+2 tablespoons roasted sesame seeds
Heat 1 table spoon oil in a wok, and sauté the cleaned, dried green chillies in it.Do not brown.
Heat 2 tablespoons oil in another wok and add to the hot oil mustard, fenugreek nigella and cumin seeds.Add the ginger-garlic-coconut paste.Saute till the oil floats on top. Stir in the coriander, turmeric and chilli powders. Sauté and add in the peanut-sesame seed powder.Combine the tamarind water and green chillies.Simmer for the flavors to amalgamate.Serve hot!Gravy should be thick…
