Chicken in Mushroom sauce







Chicken in Mushroom Sauce

Preheat oven to 350 degrees F

8 skinless,boneless chicken thighs marinated well with minced garlic,salt and pepper
2 tablespoons olive oil

For the sauce

2 cups chopped mushrooms 
1/4 teaspoon garlic minced
1 onion finely diced
1/4 cup white wine
1/4 cup chicken stock
2 teaspoons corn flour 
Black pepper
Salt

Heat oil in a heavy bottom skillet. Place chicken in hot oil. Cook for about 2 mins each side. Remove onto a  baking dish.

In the same pan add the garlic and onions. Cook till fragrant. Deglaze using wine a little at a time. Cook till wine evaporates. Add mushrooms. Cook till done and add corn flour. Add chicken stock and simmer.Season. Pour over chicken and bake in the oven for 10-15 minutes.

Serve hot!
