Pepper Chicken






Pepper Chicken

500 grams skinless,boneless chicken (you may use bone in chicken)I used strips of chicken breast ,washed well
2 onions diced
1tablespoon minced garlic
1 tablespoon grated ginger
1teaspoon ground black pepper ( add more depending on your heat preferences!)
1teaspoon fennel powder
1teaspoon coriander powder
1/2 cup bruised mint leaves
Salt
3 tablespoons oil

Heat oil in a pan,add garlic and brown slightly. Add the ginger ,sauté 1 minute and add the onions. Cook till slightly browned. Add pepper, fennel, coriander powder and salt.Put in chicken- give it a good mix. Mix in mint leaves.Cook covered on medium high-about 15-20 minutes.No water is added .

Remove from heat when done.This makes a great filling for rotis.Add a bit of mint chutney and chopped onion and roll in a roti!
