Thai food- truly a favourite . This variety of Thai Basil Chicken is easy to do... Cooks up in minutes.The mingling of the flavours of fresh basil and red chilli are unmatchable!

Thai Basil Chicken500 grams skinless, boneless chicken thighs
1/2 cup coconut milk
1/4 teaspoon brown sugar (optional)
Salt
2tablespoons oil ( I used sesame)

Coarsely grind together using a mortar and pestle:
1/4 cup fresh Thai basil leaves
6-8 shallots
6 cloves garlic
6-8 fresh Thai chillies

Heat oil and sauté the ground fresh ingredients for a minute or so on high heat.Add the chicken, lower heat and allow to cook in own juices.Season with salt and add sugar if you are using it.When done,add coconut milk and simmer .Garnish with basil leaves and serve hot with Jasmine rice!
