Lemon Rice
A real quick fix-especially with left over rice!
Lemon Rice
2 cups boiled rice
1 onion diced finely
1/2 teaspoon grated ginger
Juice of 3 lemons
2 sprigs curry patta
Few dry red chillies-broken
A couple of fresh green chillies
A tablespoon each of chana and urad dals
2 tablespoons roasted and crushed peanuts
½ teaspoon mustard seeds
½ teaspoon red chilli powder
1/4 teaspoon turmeric powder
Salt
1 tablespoon oil
Splutter the mustard seeds in hot oil-add the urad and chana
dals.Allow to brown slightly and then add whole red chillies,peanuts and curry
patta.
Add onions and ginger-saute.Mix in turmeric powder,chilli
powder and salt.Lower heat, add rice and lemon juice, mix well.
Tastes good eaten on its own-or with yogurt/coconut
chutney/papppadams/lime pickle….
