6 eggs , whipped well with 2tablespoons milk, salt, pepper and red chilli powder
1large potato, diced fine
1 onion, diced fine
1 tomato , chopped
2 green chillies ( or more) chopped
2 tablespoons butter/oil
Red chilli powder
Salt
Chopped coriander for garnish

Heat oil, add diced potato. Cover and. Cook on medium heat, till half done. Add onions and chillies, seasoning. Cook till translucent and add tomatoes.Continue cooking till tomatoes are mushy. Lower heat, add eggs, stir to mix, scraping edges to get in all the egg.Cook till eggs are no longer runny, but are still soft and fluffy.
Love this on buttered toast.With paranthas.In a roti as a roll...
