Masala Meatloaf
I remember the first meatloaf I ever had-succulent and bacon infused.
Buttery mashed potatoes on the side. The taste almost still lingers on. We have
had variations over the years-with different ingredients-served with a barbecue
glaze or nothing at all.
Times have changed we do old things in new ways. Alter
ingredients to match our taste buds.
And the potatoes? Replaced by the sautéed veggies…
Masala Meatloaf
Pre heat oven 350 derees F
500 grams very finely ground meat
1 whole egg, whipped
½ cup mixed mint and coriander leaves
½ cup fine bread crumbs
A little red chilli powder
Salt
Dry roast and grind: a small piece cinnamon, 2-3 cloves, 4-5
peppercorns, 2 cardamom pods
Sauté together in a tablespoon of oil:
1 chopped onion, 2 cloves garlic, 1 teaspoon fresh grated
ginger
Mix all ingredients together and place in a pre greased loaf
pan.
Bake for about 40 minutes.
Turn meat loaf on to serving plate and serve with sautéed fresh
veggies.
