Gajar-Shalgam achar

Very easily made, this tangy, crunchy pickle-quintessentially a winter goody- is a winner! Make in small batches-keeps for a few weeks.
3 turnips, peeled and sliced lengthwise
6 red carrots, peeled and cut length wise into 2-3” pieces
A few green chillies (optional)
2 level tablespoons black mustard seeds, coarsely ground
1 tablespoon vinegar
1 teaspoon red chilli powder
2 tablespoons oil
Salt
Wash the turnips and carrots, dry for a few hours in the sun/between layers of absorbent paper.

Mix all the ingredients well, check seasoning, store in air tight jars.
