Slow cooked mutton
750 grams mutton
2 medium onions, sliced
¾ cup mustard oil,divided
2 teaspoons Kashmiri red chilli powder
Marinade:
20 cloves garlic,crushed
2” piece ginger,grated
1 cup mixed,chopped mint and coriander leaves
5-6 green chillies, crushed
Dry roast on a griddle and grind:
1” cinnamon stick
2 teaspoons cumin
2 teaspoons saunf
2 teaspoons coriander seeds
3-4 dry red chillies
8-10 peppercorns
8-10 green cardamom
Marinate the mutton with:
Ginger,garlic,herbs ,green chillies and roasted and ground spice mix.Add ½ the oil.Let it marinate for 1-2 hours.
Heat the remaining oil-in a heavy botton pan.Add the onions,cook till golden brown.Add the bay leaf and the marinated mutton.Cover with a well fitting lid-so that steam doesn’t escape.Cook on very low heat-I didn’t add water.Took about 1.5 hours to cook!Open lid carefully, mix well and serve hot!
