Cold days. Hot soup!
Onion Celery Soup
2 onions chopped
2 stalks of celery washed well and chopped, remove and chop leaves and set aside
2 cloves garlic
1 cup milk
3 cups stock - chicken/ vegetable
1/2 teaspoon pepper
1teaspoon cornflour dissolved in a little cold milk
Salt
1 teaspoon oil
Sauté together the onion,celery and garlic in a teaspoon of oil till fragrant and till the onion and garlic are just a very light brown. Add the salt and pepper. Cool and blend using a little milk. Pour back to pan,add the cornflour milk mixture. Simmer and add rest of milk and stock. Adjust seasoning, add the chopped celery leaves .Simmer about 5 minutes.Serve hot!
Top with:
Shredded cheddar or crisp crumbled bacon!
