Zucchini Medley




Pre heat oven to 350 degrees F

6 zucchinis cut in half and then halved again by cutting lengthwise- remove the centre flesh using a spoon- set aside
1/2 an onion chopped finely
2 cloves garlic minced
1 cup finely diced peppers- red,green and yellow
1/2 cup grated cheese - I used mixed cheddar and mozzarella
1/2 teaspoon red chilli powder
1/2 teaspoon oregano flakes
Salt
1tablespoon oil+ extra for drizzling and grazing baking tray

Sauté onions and garlic and add to it the peppers , the zucchini pulp and seasoning of red chilli powder, salt and oregano flakes.Cook 1-2 minutes. Remove from heat and cool. 
Using a teaspoon fill in the hollowed out zucchini pieces. Place on baking sheet. Cover with grated cheese .Bake in oven at 350 degrees for  25 minutes.

Serve hot with a tomato- cheese topping.

Tomato Cheese Glaze

6 ripe tomatoes seeded and chopped finely
1/2 onion chopped finely
2 cloves garlic crushed/ minced
1/2 cup cheese grated
Powdered black pepper 
Salt
1teaspoon cornflour dissolved in a little milk
1 tablespoon oil

Sauté onion and garlic in oil. When translucent add chopped tomatoes. Cook till tomatoes are cooked. Season and add cheese and cornflour. Add a little milk to adjust consistency.
