Hearty Soup
For these cold, winter days.... when one would like to cosy up with a good book to read , a quilt to snuggle in and a hot soup to warm your chilled bones!
Hearty Veggie Soup
4cups vegetable/ chicken stock
2 cups veggies- julienned carrots , shredded cabbage, fresh moong sprouts,sliced green beans, diced mushrooms
2 green onions, chopped, include the green portion
Green coriander- include the stems
1 small knob of ginger, grated
2-3 cloves garlic, halved
A little minced lemon grass
1 cup coconut milk
2 fresh red chillies sliced on the bias

Boil stock with garlic, ginger and lemon grass.
Add vegetables, saving the sprouts to be added just before serving.Add the seasoning and coconut milk.
Simmer till the veggies are tender- crisp.Add the fresh red chillies- cook for a few seconds.
Add the sprouts and coriander .Pour into bowls.

Heat oil and lightly brown the chopped garlic. Spoon over the soup, serve hot!
