Mutton Dak Bungalow...Sharmistha Mukherjee
Ingredients :
1kg mutton with bones
1tspn ginger paste
11/2 tspn garlic paste
3-4 big red onion chopped finely
1 cup plain curd beaten
2-3 bay leaves
4-5 green cardamom
2" stick cinnamon
4-5 cloves
1/2 tspn turmeric
1 tspn Kashmiri red chilli pwd
1tspn sugar
Ghee
1/2 Tspn Shahi garam masala
6 hard boiled eggs
4 medium size potatoes cut in halves
Mustard oil to cook
Salt as per taste
1 whole red chilli
1/2 tspn each of cumin seeds and coriander seeds
Method:
Marinate the mutton with half of ginger & garlic paste, chilli powder and mustard oil for min 4-5 hours. I did it overnight.
Dry roast the whole red chilli, coriander seeds and cumin seeds and powder them.
In a pan heat mustard oil.
Fry the potatoes and boiled eggs and keep aside.
Now add the bay leaves, cardamom, cinnamon, cloves to the oil and sauté till it becomes fragnant. Then add sugar and let it turn light brown.
Then add the onion and fry until light brown.
Add the rest of the ginger garlic paste. Sauté well.
When oil starts to separate, then add the beaten yogurt.
Add turmeric, chilli powder & the roasted masala. Now add the mutton pieces and bhuno it till it becomes dark brown in colour. You need to bhuno it for long till oil floats on top. Now add water and and pressure cook till the mutton is just one step away from becoming tender. Then open the pressure cooker and add the potatoes and eggs and give one more whistle.
Lastly add the garam masala and ghee and serve hot!
