Kaanji




Gajar Ki Kaanji
This tangy fermented carrots drink is a sure winner . Have it while basking in the warmth of the winter sun!
1/2 kilo black carrots 
8 cups water
3 tablespoons ground mustard seeds
Salt
Wash and peel the carrots. Cut into batons.
Place in a glass jar, add the salt, mustard powder , salt and water. Stir . Close jar- keep in the sun for 3-4 days.
Some people add "kala namak"- and slices of beetroot for extra colour.I haven't.
Enjoy ... and munch on the healthy carrot pieces !
