Apricot Raisin Cake



Apricot Raisin Cake
1 cup flour sifted
3/4 cup brown sugar
2 level teaspoons baking powder
Pinch of soda
1/2 cup oil/butter at room temperature
2 eggs-whisked
½ cup stewed apricots
½ cup raisins
A stick of cinnamon
Vanilla essence
Stew the apricots in a little water-add the cinnamon stick.Add raisins .Let it stand for about 10 minutes.Drain, squeeze excess water.Remove apricotseeds.Reserve water.
Pre heat oven to 350 degrees

Grease a bundt pan (or any other you are using)
Mix sifted flour, baking powder, and soda in a medium bowl. Beat oil/butter and sugar in another bowl, scraping down sides of bowl, until light and fluffy. Add whisked eggs, and vanilla essence and beat until combined.
With mixer on low speed, add dry ingredients a little at a time.Fold inapricot-raisin mixture.Add reserved water to adjust consistency.Pour into the prepared bundt pan.
Bake, 20-25 minutes. 
Serve while still warm!
