Kerala Chicken
A very simple way of making our favourite chicken....
Marinate ( for about 2 hours/ overnight) 750 grams chicken on the bone with:
1 teaspoon ginger garlic paste
2 tablespoons finely minced baby onions
1teaspoon each of coriander powder , red chilly powder, garam masala powder
1 tablespoon fennel seeds powder
1 sprig crushed curry leaves
A drizzle of coconut oil
1/4 cup minced garlic and grated ginger
10 baby onions , minced
2-3 chopped green chillies
2-3 tablespoons coconut oil
Salt
Heat oil, sauté the onions, cook till fragrant and translucent. Add ginger and garlic. Combine the chopped green chillies- cook for about 5-7 minutes .Put in the marinated chicken, lower heat and cook on medium heat. Stir often to avoid masalas sticking at the bottom. Sprinkle a little water if required.Season . Mix well. Check for done ness.
Serve hot!
