Pineapple Up side Down Cake
Reviving my rusty baking skills ! This all time favourite with the children in their growing up years. The only thing missing are the red cherries for the pop of colour- couldn't find any at hand!
Pre heat oven to 150 degrees C
Prepare bundt pan ( or any other) by greasing with butter, and layering the base with 1/2 cup brown sugar and 2 tablespoons softened butter.Cut canned pineapple rings into 1/2 after patting dry on tissue. Place evenly over butter- brown sugar mixture.
Sift together 2 cups flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda
Cream together 4 eggs, 3/4 cup granulated sugar, 3/4 cup softened butter and a teaspoon of vanilla essence,till pale and fluffy.
Gently mix in flour . Add reserved pineapple juice to get the correct consistency for the batter.
Pour into prepared pan. Bake at 150 degrees C for 40 minutes.
Cool and unmould .
