Potato Salad
The humble potato. Jazzed up with a creamy sauce. And a crunch added with crisp crumbled bacon and onions.Great as a side. Super as a salad. Welcome summer!!
6 even sized potatoes,washed and cubed, boiled in salted water till fork tender,drained and cooled
1/2 an onion diced
2 bacon rashers, cooked till crisp, drained of fat and crumbled
2 boiled egg whites, chopped - addition of yolks optional
Mix well- reserve a little bacon for garnish
Dressing
3/4 cup thick yogurt/ hung curd
1teaspoon coarsely ground mustard- I used store bought
1/2 teaspoon sugar
Fresh ground pepper
Salt
A little milk to thin out if required
Whisk all the ingredients well, pour over potato mixture.
Garnish with crushed bacon.
Serve chilled !
