Smoked Gouda Quiche

Pre heat oven:200 deg C

For the pastry:
Flour-1 cup sieved, with a little salt
2 tablespoons butter
Ice cold water to knead
For the filling:
3 egg whites+1 yolk-beaten
¼ cup milk
¼ cup cream (optional)
½ cup grated smoked gouda
Chopped spinach leaves-1 cup, loosely packed
A little red chilli powder
Salt
A piece of aluminium foil.
Red beans (rajma) –

Rub together sifted flour, salt and butter so that the mixture resembles breadcrumbs.Add water a little at a time to form smooth but firm dough.Place in refrigerator for about 45 mins.
Roll out pastry dough and line the pie dish with it.Trim excess dough.Press down with finger tips so that the pastry is snug in its shell!Place foil on top of pastry base and red beans on it.Bake blind for 20 minutes.Remove and cool.Discard foil and beans.
In the meanwhile,add the milk, cream, cheese , spinach and condiments to beaten egg.Whisk.
Pour into cooled pastry shell.
Bake for 30 minutes, or till set.
