Chow-Chow (Chayote) Curry
These vegetables of the squash family- often referred to as chow chow by our local grocer in India. Tastes almost like a tinda . Haven't made it in quite sometime, but seeing a couple of them languishing in the refrigerator put me to work....
2 chayotes washed, peeled and diced *
1/2 an onion diced
1/2 teaspoon minced garlic
1/2 teaspoon ginger grated
1/2 teaspoon mustard seeds
1/2 teaspoon red chilli powder
A little turmeric powder
A few dry red chillies
A few fenugreek seeds
1/2 cup whipped curd
Salt
1 tablespoon oil
Grind together using a little water:
1/2 cup grated coconut
1 green chilli
Heat oil and splutter the dry red chillies,mustard seeds,fenugreek seeds. Sauté together the onion, ginger and garlic. Add seasoning, and the chayote cubes. Cook covered till it is almost tender and add the whipped curd and ground coconut.
Serve hot...
*On peeling the chayotes usually secrete a non toxic sap that sticks like glue to your hands. Best cut and peeled using gloves or peeling them under water.
