Coconut Prawn Rice



Coconut Prawn Rice
2 cups sela rice, soaked in water for 30 minutes
1cup prawns, deveined and washed well
1onion sliced
6 cloves garlic, crushed
1tablespoon ginger, grated
1tablespoon green chillies crushed
1cup grated coconut
2sprigs curry leaves-crush leaves in mortar and pestle
1teaspoon red chilli powder
4 tablespoons oil (I used coconut)
Salt
4 cups water
Heat oil and sauté onions till translucent and then add coconut and sauté till both onion and coconut are golden brown. Add ginger, garlic, green chillies and curry patta.
Add prawns, salt and red chilli powder.
Sauté till fragrant.
Add rice,mix well. Pour in water. Once it boils, lower heat to the minimum.Cover and cook till rice is done.
Serve with raita, papadams and lime pickle...
