Beetroot Hummus
It was a pretty sight to see 3 bowls of differently colored hummus at a friends dinner party a few days ago…green-made with chick peas and spinach,the original pale yellow regular hummus and the one that caught my eye-the lovely pink beetroot hummus
2 cups chick peas, boiled and cooled
1 beetroot boiled ,peeled and cubed
3 cloves garlic, crushed
3 tablespoons tahini paste
½ teaspoon cumin powder
1 tablespoon olive oil + a tad extra for garnish
½ teaspoon black pepper powder
Juice of 1 lemon
Red chilli powder for garnish
Combine all the ingredients in the food processor and pulse for a few minutes, or till it forms a smooth paste. Garnish with a little olive oil and red chilli powder.
