Cholia Pulao



Cholia ka Pulao
1 cup fresh cholia, washed well
1 cup long grain rice
1 onion sliced
1 potato peeled and cubed
2 badi elachi seeded and crushed
2" piece cinnamon
1 teaspoon cumin
6-8 peppercorns
1 teaspoon red chilli powder
Salt- 2 level teaspoons
4 tablespoons oil
2 cups water
Soak rice for 30 minutes, and then drain.Heat oil, add cumin, elaichi, cinnamon,peppercorns and sauté till fragrant.Add onions and cook till caramelised but not burnt.
Add cholia,potatoes and dry masala including salt.Saute.Put in the rice and mix well. Add water, let it come to a boil. Once it is boiling, reduce heat to the minimum possible. Cover and cook till done.
We usually serve with dahi/ raita/ achaar.
