Pan grilled fish with orange glaze
4 fillets fish (I used pomfret),washed well, pat dried.Sprinkle both sides with salt .
1 tablespoon coarsely ground black mustard mixed with juice of 1 lime
Oil
Rub the mustard paste well over the fillets.
Pan fry in hot oil over medium heat till well browned on both sides.
Glaze:
Mix together in 11/2 cups orange juice:1 tablespoon coarsely ground black mustard seeds,1/2 teaspoon orange rind,juice of 1 lemon,salt,red chilli powder.
Heat in a pan over low heat.Let it cook till it reduces to about 1 cup.
Arrange fish on plate and drizzle the glaze over it…
