Pan Grilled Marmalade Chicken

Pan grilled marmalade chicken
6 boneless chicken thighs , flattened a little with a meat mallet
Marinade
3 tablespoons of orange marmalade
1/2 teaspoon mustard paste
1teaspoon grated ginger
Juice of 1 lemon
2 tablespoons oil
1 teaspoon red chilli powder
Salt
Blitz ingredients in a mixer.
Marinate chicken with marinade mix, preferably overnight.
Heat oil on a grill pan on the stovetop. (I used spray)
Place chicken on pan and cook over medium heat for about 4-5 minutes each side, or till the juices run clear when pierced with a fork.
Should be a good golden brown. Serve with a green salad or sautéed vegetables.
